I just bought a brand new SKY = box with card, thinking I would be able to record with it. But it turns out you need a subscription...

Did I just waste €120? Or is there a work-around?

Evening, im not 100% sure. Unfortunately any work around is going to almost certainly be Illegal which is not somthing we would be able to cover on here. Im sure a Youtube/Google search may bring up some advice.
